Strawberry Base
- 300g strawberries (about 10.5 oz)
- 50g sugar (1/4 cup)
- 35g cornstarch (1/3 cup)
- 1 tsp vanilla extract (optional)
Whipped Cream
- 140ml whipping cream (1/2 cup + 1 tbsp – dairy or plant-based)
- Make the Strawberry Base: Blend the strawberries, sugar, and cornstarch together until the mixture is smooth. Pour the blend into a saucepan and cook over medium heat, whisking constantly until it thickens into a smooth, pudding-like consistency. Remove from heat and stir in vanilla extract if using.
- Chill the Mixture: Allow the strawberry mixture to cool slightly, then cover the surface directly with plastic wrap to prevent a skin from forming. Place it in the refrigerator and chill for 1 hour until fully cooled.
- Whip the Cream: Using a mixer or whisk, whip the cream until soft peaks form. Be careful not to overwhip to maintain a light and airy texture.
- Combine Gently: Fold the chilled strawberry base gently into the whipped cream with a spatula, blending carefully to maintain the mousse’s light texture without deflating the cream.
- Serve & Enjoy: Spoon or pipe the mousse into serving glasses. Optionally garnish with fresh mint leaves or sliced strawberries. This mousse also works beautifully as a cake filling.
Notes
- For a dairy-free version, use plant-based whipping cream.
- Be sure to whisk the strawberry mixture constantly while cooking to avoid lumps or burning.
- Chilling the strawberry base thoroughly is essential for the mousse to set properly.
- Do not overwhip the cream to keep the mousse light and airy.
- This mousse can be prepared a day ahead and kept refrigerated.
