Chicken and Filling

  • 2 chicken breasts, boneless & skinless
  • 1 Honeycrisp apple, cored and sliced thin
  • 1 wedge of brie cheese, sliced
  • 1 garlic clove, minced
  • Salt & pepper, to taste

Glaze

  • 2 Tbsp maple syrup
  • 1 tsp Dijon mustard
  • ¼ tsp dried thyme

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s ready when the chicken is prepared.
  2. Prepare the chicken breasts: Using a sharp knife, carefully slice a pocket horizontally into each chicken breast without cutting all the way through. Season both inside and outside with salt and pepper to taste.
  3. Stuff the chicken: Layer thin slices of brie cheese and apple inside each chicken breast pocket. Add a sprinkle of minced garlic inside for added flavor. Close pockets and secure with toothpicks if necessary to keep the filling intact.
  4. Make the glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, and dried thyme.
  5. Apply glaze: Place stuffed chicken breasts in a baking dish and brush the maple-dijon glaze generously over each chicken breast.
  6. Bake the chicken: Bake in the preheated oven for 25-30 minutes, until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The glaze should be caramelized and slightly bubbly.
