Ingredients

Scale

Bread Batter

  • 1/2 cup (113g) unsalted butter, softened
  • 2/3 cup (133g) granulated sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup (120ml) milk
  • 2 medium apples, peeled, cored & diced (mix of tart & sweet)

Cinnamon Sugar Mixture

  • 1/3 cup (67g) brown sugar
  • 1 tsp ground cinnamon

Vanilla Glaze

  • 1/2 cup (60g) powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to warm up while you prepare the batter, ensuring it reaches the ideal baking temperature.
  2. Cream the butter and sugar: In a large bowl, use a mixer to beat the softened butter with granulated sugar until the mixture is light and fluffy. This creates a smooth base for your bread texture.
  3. Add eggs and vanilla: Incorporate the eggs one at a time, beating well after each addition, then mix in the vanilla extract to infuse the batter with flavor.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder to evenly distribute the leavening agent for consistent rising.
  5. Alternate adding dry ingredients and milk: Gradually add the flour mixture to the butter mixture, alternating with milk, starting and ending with the flour. Mix gently to avoid overworking the batter, which can make the bread tough.
  6. Fold in apples: Carefully fold the diced apples into the batter, ensuring they are evenly distributed for a perfect balance of fruit in each slice.
  7. Create the cinnamon-sugar swirl: In a small bowl, mix the brown sugar and ground cinnamon. Pour half of the batter into a greased loaf pan, sprinkle half of the cinnamon sugar mixture over it, then add the remaining batter on top, and finish by sprinkling the rest of the cinnamon sugar evenly over the top.
  8. Marble the cinnamon sugar in the batter: Use a skewer or knife to swirl gently through the batter and cinnamon sugar to create a marbled effect without fully mixing it in.
  9. Bake the bread: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Prepare the vanilla glaze: While the bread bakes, whisk together powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust milk quantity to reach desired drizzling consistency.
  11. Cool and glaze: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack. When the bread is just warm or cooled, drizzle the vanilla glaze evenly over the top to add sweetness and shine.
  12. Serve and enjoy: Slice the bread and serve warm or at room temperature. It pairs wonderfully with a cup of coffee or tea.

Notes

  • Use a mix of tart and sweet apples like Granny Smith and Fuji for a balanced flavor and texture.
  • Make sure the butter is softened but not melted for proper creaming.
  • Don’t overmix the batter once the flour is added to keep the bread tender.
  • Adjust the amount of glaze milk to get a thicker or thinner glaze depending on your preference.
  • Store leftover bread in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • This bread can be frozen for up to 2 months; thaw at room temperature before glazing.
