Ingredients

Scale

Pasta

  • 12 oz elbow macaroni or rotini pasta

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced

Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process and cool the pasta for the salad.
  2. Prepare Dressing: In a medium bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, sugar, garlic powder, salt, and pepper until smooth and well combined.
  3. Combine Salad: In a large mixing bowl, add the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and black olives. Pour the dressing over the salad and toss thoroughly until all ingredients are evenly coated.
  4. Chill and Serve: Cover the pasta salad and refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve chilled as a side dish or light meal.

Notes

  • For added protein, consider mixing in cooked chicken or canned beans.
  • You can substitute mayonnaise with Greek yogurt for a lighter version.
  • Add fresh herbs like parsley or basil for extra flavor.
  • This salad keeps well in the refrigerator for up to 3 days.
