Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 large egg
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • Zest of 1 large lemon (about 1 tbsp)
  • 1/2 tsp baking powder
  • Pinch of salt
  • 3/4 cup fresh or frozen blueberries (do not thaw)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the cottage cheese, egg, honey or maple syrup, and vanilla extract. Mix well until smooth and fully combined.
  3. Add Dry Ingredients: Stir in the rolled oats, lemon zest, baking powder, and a pinch of salt. Mix until the batter is evenly combined and slightly thickened.
  4. Fold in Blueberries: Gently fold in the fresh or frozen blueberries, taking care not to break them up to keep the batter streaked with berry color.
  5. Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin cups, filling each almost to the top.
  6. Bake: Bake for 20-25 minutes or until the tops are set and a toothpick inserted in the center of a bite comes out clean.
  7. Cool and Serve: Let the bites cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Use fresh or frozen blueberries without thawing to prevent excess moisture in the batter.
  • For a vegan version, substitute the egg with a flax egg and use maple syrup instead of honey.
  • These bites can be stored in an airtight container in the refrigerator for up to 4 days.
  • To increase fiber, consider using steel-cut oats, but soak them overnight before using.
  • Adding a sprinkle of cinnamon or nutmeg can enhance the flavor if desired.
