Ingredients

Scale

Quesadilla Filling

  • 1 cup fresh blueberries (frozen blueberries, thawed, also work)
  • 1 cup cream cheese, softened
  • 2 tablespoons honey or maple syrup
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon cinnamon (optional)

Quesadillas

  • 4 medium-sized flour tortillas
  • Butter or nonstick spray, for cooking

Optional Toppings

  • Powdered sugar
  • Greek yogurt
  • Extra blueberries or sliced strawberries

Instructions

  1. Prepare the Filling: In a medium bowl, mix softened cream cheese, honey, vanilla extract, and cinnamon until smooth and well combined. Gently fold in the fresh blueberries to distribute them evenly throughout the cream cheese mixture.
  2. Assemble the Quesadillas: Lay out two flour tortillas on a flat surface. Spread the cream cheese and blueberry mixture evenly over the tortillas, leaving about a half-inch border around the edges. Top with the remaining two tortillas to form two quesadillas.
  3. Cook the Quesadillas: Heat a large skillet or griddle over medium heat. Lightly butter the skillet or spray with nonstick spray. Carefully place one quesadilla in the pan and cook for about 3-4 minutes until the bottom is golden brown. Carefully flip and cook the other side until golden and the filling is warmed through. Repeat with the second quesadilla.
  4. Serve: Remove the quesadillas from the skillet and let them cool for a minute. Cut each quesadilla into wedges. Serve warm with optional toppings such as a dusting of powdered sugar, a dollop of Greek yogurt, and extra fresh berries as desired.

Notes

  • You can substitute frozen blueberries if fresh are not available; just make sure to thaw and drain excess moisture.
  • Adjust sweetness to your taste by adding more or less honey or maple syrup.
  • For a gluten-free option, use gluten-free tortillas.
  • Try adding a sprinkle of lemon zest to the filling for a bright, fresh flavor twist.
  • Serve immediately for best texture; quesadillas may soften if left too long.
