Blueberry Jam

Danish

  • 1 sheet frozen puff pastry dough
  • 4 oz cream cheese, softened
  • 1 & 1/2 tbsp granulated sugar
  • 1/2 cup fresh blueberries
  • 1/3 cup blueberry jam (prepared from above)
  • 1 egg
  • 1 tbsp water

Instructions

  1. Make the Blueberry Jam: Place the blueberries, granulated sugar, and lemon juice in a medium saucepan. Cook over medium heat for about 15 minutes until the mixture thickens, stirring occasionally to ensure even cooking. Once done, set aside to cool.
  2. Prepare Puff Pastry: While the jam is cooking, thaw the puff pastry sheet until cold but not frozen. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Shape Puff Pastry: Roll the thawed puff pastry on a floured surface into a 9 by 9 inch square. Cut the dough into a 3 by 3 grid, creating 9 equal squares. Using a sharp knife, lightly score a smaller square inside each piece about 1/4 inch from the edge without cutting through. Poke the center of each square with a fork to prevent it from puffing up too much. Set aside.
  4. Prepare Cream Cheese Filling: In a small bowl, mix the softened cream cheese with 1 & 1/2 tablespoons of granulated sugar until smooth. Scoop out a heaping tablespoon of this mixture into the center of each puff pastry square and gently spread it, avoiding the edges.
  5. Add Blueberry Topping: In another small bowl, combine the blueberry jam with fresh blueberries. Top each cream cheese-filled square with a heaping tablespoon of this blueberry mixture, spreading gently and keeping clear of the edges.
  6. Apply Egg Wash and Bake: Beat the egg with water to create an egg wash. Brush the edges of each pastry square with the egg wash to help them brown nicely. Bake the danishes in the preheated oven for 16 minutes until golden and puffed.
