Ingredients

Scale

Brownie Base

  • 1 box (18-ounce) brownie mix (plus ingredients listed on the box, typically eggs, oil, and water)
  • Cooking spray or parchment paper

Cream Cheese Topping

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Fruit Topping and Garnish

  • Assorted fresh fruits such as strawberries, blueberries, raspberries, kiwi, and grapes, washed and sliced
  • 1/4 cup apricot preserves or fruit jelly, melted (optional, for glaze)
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the Brownie Base: Preheat your oven according to the brownie mix package directions. Line a round baking pan with parchment paper or lightly coat it with cooking spray. Prepare the brownie batter as directed on the box by mixing the required eggs, oil, and water with the brownie mix.
  2. Bake the Brownies: Pour the prepared batter into the pan and bake for the time recommended on the package, usually between 25 to 30 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  3. Prepare the Cream Cheese Topping: In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until the mixture is smooth, creamy, and spreadable.
  4. Assemble the Pizza: Once the brownies have fully cooled, spread the cream cheese mixture evenly over the top of the brownie base.
  5. Add Fresh Fruit: Arrange the sliced fresh fruits artistically over the cream cheese layer, covering the surface with your choice of strawberries, blueberries, raspberries, kiwi, grapes, or any other preferred fruits.
  6. Add Glaze: Optionally, brush the melted apricot preserves or fruit jelly over the fruit to give a shiny glaze and keep the fruit fresh longer.
  7. Garnish and Serve: Add fresh mint leaves for an extra touch of color and flavor. Slice into wedges and serve immediately or keep refrigerated until serving.

Notes

  • Use a round pizza pan or any circular baking pan to achieve the pizza shape.
  • Ensure the brownies are completely cooled before adding the cream cheese topping to prevent melting.
  • The fruit glaze is optional but helps in preserving the fresh fruit appearance and adds a subtle sweetness.
  • You can customize the fruit toppings based on seasonality and preference.
  • This dessert is best served the same day but can be refrigerated for up to 2 days.
