Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil. Add 12 oz of rotini pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.
  2. Combine Chicken and Buffalo Sauce: In a bowl, toss 2 cups of cooked, diced chicken breast with 1/2 cup buffalo sauce until the chicken is evenly coated. Set aside.

  4. Add Milk and Thicken: Slowly pour in 2 cups of milk while whisking constantly to avoid lumps. Continue to cook and stir until the sauce thickens, about 5-7 minutes, reaching a creamy consistency.
  5. Add Cream Cheese and Cheddar: Reduce heat to low. Add 4 oz of cream cheese in chunks and 1 cup shredded sharp cheddar cheese to the sauce. Stir until all the cheese is melted and the sauce is smooth.
  6. Combine Pasta, Chicken, and Sauce: Add the cooked pasta and buffalo chicken mixture into the cheese sauce. Stir well to ensure everything is evenly coated.
