Instructions

  1. Prepare the Chicken: In a small bowl, combine the cayenne pepper, garlic powder, onion powder, dried oregano, red pepper flakes, paprika, salt, and pepper. Rub this Cajun seasoning mix evenly onto the chicken breasts.
  2. Cook the Chicken: Heat a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until fully cooked and juices run clear. Remove chicken from skillet and set aside to rest.
  3. Sauté the Onion: In the same skillet, add the diced white onion and cook over medium heat until translucent and soft, about 3-4 minutes. Pour in the chicken broth and stir, scraping up any browned bits from the skillet for added flavor.
  4. Prepare the Alfredo Sauce: While the onion and broth are warming, cook the fettuccine noodles according to package directions, then drain and set aside. You can prepare a traditional Alfredo sauce at this stage by adding butter, heavy cream, and parmesan cheese to the skillet with the onion and broth, stirring until the cheese melts and sauce thickens slightly.
  5. Combine and Serve: Slice the cooked Cajun chicken into strips. Toss the cooked fettuccine noodles in the Alfredo sauce, then top with the sliced chicken. Garnish with extra paprika or fresh parsley if desired. Serve immediately for a rich and spicy Alfredo dish.
