Ingredients

Scale

Main Ingredients

  • 1 package (20 oz) cheese tortellini
  • 1 tablespoon olive oil
  • 1 lb beef sirloin, thinly sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced

For the Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • ½ cup shredded provolone cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  1. Cook the Tortellini: Bring a large pot of salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. Sauté the Beef and Vegetables: Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef sirloin and cook for 3-4 minutes until browned. Remove beef and set aside. In the same skillet, add the sliced green bell pepper, onion, and minced garlic. Sauté until the vegetables are tender and slightly caramelized, about 5-7 minutes.
  3. Make the Provolone Sauce: In a separate saucepan, melt butter over medium heat. Whisk in flour to create a roux and cook for 1-2 minutes, stirring constantly to avoid browning. Gradually whisk in whole milk to prevent lumps, cooking until the sauce thickens and coats the back of a spoon, about 5 minutes.
  4. Add the Cheeses: Lower the heat and stir in shredded provolone and grated Parmesan cheese until fully melted and smooth. Season the sauce with salt and pepper to taste.
  5. Combine All Ingredients: Return the cooked beef and sautéed vegetables to the sauce and stir to combine. Add the cooked tortellini and gently toss to coat everything evenly in the rich provolone sauce. Cook for an additional 2 minutes to warm through.
  6. Serve: Transfer the Cheesesteak Tortellini to plates or a serving dish. Optionally garnish with extra Parmesan cheese or fresh herbs like parsley. Serve immediately and enjoy your indulgent and flavorful meal!

Notes

  • You can substitute whole milk with half-and-half for an even creamier sauce.
  • For a spicier version, add a pinch of red pepper flakes when sautéing the vegetables.
  • Use fresh tortellini if available for best texture and taste.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stove with a splash of milk to loosen the sauce.
  • To make the dish gluten-free, use gluten-free flour and pasta alternatives.
