  • 1 small tomato, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons mayonnaise or aioli
  • 1 tablespoon olive oil or butter for grilling

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides. Grill or pan-fry them over medium heat for 6-7 minutes per side or until fully cooked and no longer pink inside. Let the chicken rest for a few minutes, then slice thinly.
  2. Toast the bread: Lightly toast the slices of bread to your preference. This helps prevent the bread from becoming soggy when assembling the sandwich.
  3. Assemble the sandwich: Spread mayonnaise or aioli on one side of each bread slice. On two slices, layer sliced chicken, avocado slices, tomato, and red onion. Top with a slice of cheese.
  4. Melt the cheese: Place the sandwich halves open-faced under a broiler or in a hot skillet until the cheese melts and becomes bubbly, about 1-2 minutes under broiler or 2-3 minutes in skillet.
