  • 4 tablespoons butter, softened

Instructions

  1. Prepare the chicken: Slice the chicken breasts in half horizontally to create cutlets, then season with salt, pepper, garlic powder, dried oregano, and dried basil. Coat each piece with flour, dip them in beaten egg, then dredge thoroughly in Italian breadcrumbs.
  2. Cook the chicken: Heat a skillet over medium heat and cook the breaded chicken cutlets until golden brown and cooked through, about 4-5 minutes per side. Remove from heat and set aside.
  3. Assemble the sandwiches: Butter one side of each bread slice. On the unbuttered side of four slices, spread a spoonful of marinara sauce. Place a cooked chicken cutlet on top of the sauce, then add shredded mozzarella and a sprinkle of grated Parmesan cheese. Spoon additional marinara sauce over the cheese, then top with another slice of bread, butter side facing out.
