Instructions

  1. Prepare the Dough: In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  2. Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
  3. Prepare the Filling: In a small bowl, mix together the brown sugar and ground cinnamon for the filling.
  4. Shape the Dough: Turn the dough out onto a lightly floured surface and roll it into a rectangle about ¼ inch thick. Evenly sprinkle the cinnamon sugar filling over the dough surface.
  5. Roll and Slice: Carefully roll the dough tightly from the long side into a log. Slice the log into ½-inch thick cookies and place them on a baking sheet lined with parchment paper, spaced about 2 inches apart.
  6. Bake: Preheat the oven to 350°F (175°C). Bake the cookies for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  7. Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature.
