Ingredients

Scale

Dough:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract

Filling:

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt until well combined.
  3. Cream Butter and Sugars: In a large bowl, use an electric mixer to cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add Egg and Vanilla: Beat in the large egg and vanilla extract to the creamed mixture until fully incorporated and smooth.
  5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients into the wet ingredients, mixing on low speed until just combined to form the cookie dough.
  6. Prepare Filling: In a small bowl, mix the brown sugar and ground cinnamon together for the filling until evenly combined.
  7. Shape the Cookies: Take a tablespoon of cookie dough and flatten it into a small rectangle. Sprinkle a teaspoon of the cinnamon sugar filling evenly over the dough, then roll it up like a miniature cinnamon roll. Pinch edges to seal and place seam side down on the prepared baking sheet. Repeat with remaining dough and filling.
  8. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.
  9. Cool: Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For a richer flavor, try substituting the unsalted butter with browned butter.
  • Ensure the butter is softened, not melted, to achieve the best cookie texture.
  • You can dust the cooled cookies with a light glaze of powdered sugar and milk or cream for an extra sweet touch.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • To keep cookies soft longer, add a slice of bread to the container to help retain moisture.
