Cake Batter

Streusel Topping

  • 3 Tablespoons softened butter

Cinnamon Crumb Layer

  • ½ cup firmly packed light brown sugar
  • ½ cup all-purpose flour
  • ½ Tablespoon cinnamon
  • ¼ cup butter, cubed
  • ⅛ teaspoon salt

Glaze

  • ½ cup powdered sugar
  • 2½ teaspoons milk

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch square baking pan or line it with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt for the cake batter.
  3. Combine wet ingredients: In a separate bowl, beat the egg lightly, then mix in the melted butter and buttermilk until fully combined.
  4. Make batter: Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing to keep the cake tender.
  5. Prepare streusel topping: In a small bowl, mix the softened butter, cinnamon, flour, and brown sugar until crumbly. Set aside.
  6. Prepare cinnamon crumb layer: Combine light brown sugar, flour, cinnamon, cubed butter, and salt in a bowl. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  7. Assemble the cake: Pour half of the batter into the prepared pan. Sprinkle half of the cinnamon crumb layer over the batter. Add the remaining batter on top, then sprinkle the streusel topping and the rest of the crumb layer evenly over the top.
  8. Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  9. Make glaze: While the cake is baking, mix powdered sugar and milk together until smooth.
  10. Cool and glaze: Allow the cake to cool in the pan for about 15 minutes, then drizzle the glaze over the warm cake before serving.
