Ingredients

Scale

Wrap Ingredients

  • 1 cup Cottage cheese
  • 2 large Eggs
  • 2 large Egg whites
  • 1 cup Mozzarella cheese (shredded)
  • 1/4 cup Blanched almond flour (for texture)
  • 1/2 tsp Italian seasoning (optional)
  • 1/4 tsp Garlic powder (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (204 degrees C). Line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Blend Ingredients: In a blender or food processor, combine the cottage cheese, eggs, egg whites, shredded mozzarella, almond flour, and optional seasonings (Italian seasoning and garlic powder). Blend until the mixture is smooth and well combined.
  3. Spread Batter: Pour the batter onto the prepared baking sheet and spread it evenly to about 1/8 inch thickness, extending to the edges to create thin, uniform wraps.
  4. Bake Wraps: Bake in the oven for 8-10 minutes until the wraps become semi-firm. For a more golden and firmer texture, bake up to 15 minutes. Watch carefully to avoid over-browning.
  5. Cool and Cut: Allow the wraps to cool on the baking sheet for at least 15 minutes. Then, slide the parchment paper with the wraps onto a cutting board and cut into 4 rectangles.
  6. Fill and Roll: Add your favorite fillings to one end of each wrap rectangle and roll them up tightly, creating delicious and versatile wraps ready to serve.

Notes

  • Optional seasonings can be adjusted or omitted based on personal preference.
  • Blanched almond flour helps provide structure and texture; regular almond flour may alter the texture.
  • Ensure wraps cool completely before rolling to prevent tearing.
  • These wraps can be stored in an airtight container in the refrigerator for up to 3 days.
  • For reheating, gently warm in a skillet or microwave wrapped in a damp paper towel to maintain softness.
