Ingredients

Scale

Crust

  • 2 cups graham cracker crumbs
  • 1 tbsp granulated sugar
  • ½ cup unsalted butter, melted

Filling

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping (or whipped cream), divided

Pumpkin Layer

  • 1 (15 oz) can pumpkin puree
  • 1 (3.4 oz) package instant vanilla pudding mix
  • 2 cups cold milk
  • 1 tsp pumpkin pie spice

Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated with butter. Press the mixture firmly into the bottom of a 9×13 inch baking dish to form an even crust layer.
  2. Mix the cream cheese layer: In a large bowl, beat the softened cream cheese using a hand mixer or stand mixer until smooth. Gradually add the powdered sugar and vanilla extract and continue beating until well combined and creamy. Fold in half of the whipped topping gently until incorporated.
  3. Assemble the cream cheese layer: Spread the cream cheese mixture evenly over the graham cracker crust layer with a spatula.
  4. Prepare the pumpkin pudding layer: In another bowl, whisk together the instant vanilla pudding mix, cold milk, pumpkin puree, and pumpkin pie spice until the mixture thickens, approximately 2 minutes.
  5. Add pumpkin layer: Pour the pumpkin pudding evenly over the cream cheese layer and spread gently to cover.
  6. Top with whipped topping: Spread the remaining whipped topping evenly over the pumpkin layer to create a fluffy finishing touch.
  7. Chill and serve: Refrigerate the dessert for at least 4 hours or overnight to let the layers set and flavors meld. Slice into squares and serve cold.

Notes

  • For the best texture, chill overnight.
  • Use full-fat cream cheese for a richer taste.
  • Can substitute whipped topping with freshly whipped cream.
  • To make it gluten-free, use gluten-free graham cracker crumbs.
  • Ensure pumpkin puree is 100% pure pumpkin, not pumpkin pie filling.
