  • 4 chicken breasts

Spinach Filling

  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat and Prepare Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with paper towels and use a sharp knife to carefully cut a pocket through the side of each breast, ensuring not to slice all the way through.
  2. Mix the Filling: In a medium bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, chopped spinach, minced garlic, and red pepper flakes. Mix well until all ingredients are thoroughly incorporated.
  3. Stuff the Chicken: Evenly divide the spinach mixture between the four chicken breasts, stuffing each pocket generously. Use toothpicks if necessary to secure the openings.
  4. Season the Chicken: Brush the olive or avocado oil over the exterior of the stuffed chicken breasts. Sprinkle evenly with the paprika, garlic powder, onion powder, and the remaining ½ teaspoon of salt.
  5. Bake the Chicken: Place the stuffed chicken breasts on a baking sheet lined with parchment paper or a lightly greased baking dish. Bake in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through and juices run clear. The internal temperature should reach 165°F (74°C).
  6. Rest and Serve: Remove the chicken from the oven and allow it to rest for 5 minutes before removing toothpicks and serving to retain juices and enhance flavor.
