Feta Filling

Phyllo Rolls

  • 7 sheets frozen phyllo dough, thawed
  • 1/4 cup extra virgin olive oil, plus more for brushing

Sweet Chili Sauce

  • 1/4 cup sweet chili sauce (store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp Sriracha sauce
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp water

Instructions

  1. Preheat and Prepare Feta Mixture: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. In a bowl, combine the crumbled feta, fresh dill, fresh thyme, lemon juice, minced garlic, and a drizzle of honey. Mix thoroughly until everything is well incorporated.
  2. Prepare Phyllo Dough Sheets: Lay one sheet of thawed phyllo dough on a clean work surface, keeping the remaining sheets covered with a damp towel to prevent drying out. Fold the sheet in half lengthwise and brush the top layer generously with extra virgin olive oil.
  3. Fill and Fold Rolls: Spoon about 2 tablespoons of the feta mixture onto the bottom center of the folded phyllo sheet. Fold the edges inward over the filling to enclose it, smoothing and creasing the dough as you go to avoid gaps.
  4. Roll the Dough: Carefully roll the dough upwards into a tight log, stopping about an inch from the end. Brush the exposed bottom edge with olive oil and finish rolling tightly. Place the roll seam-side down on the prepared baking sheet.
  5. Brush and Bake: Brush the tops of each feta roll with additional olive oil. Place the baking sheet on the center rack of the preheated oven and bake for 20 minutes, or until the phyllo is golden and crisp.
  6. Make the Sweet Chili Sauce: While the rolls bake, combine the store-bought sweet chili sauce, soy sauce, honey, Sriracha, lemon juice, and water in a medium saucepan over low heat. Warm to a low simmer, then immediately remove from heat to prevent burning. Transfer the sauce to a serving dish.
  7. Finish and Serve: Once the feta rolls have finished baking, brush each generously with the warm sweet chili sauce. Garnish with fresh thyme if desired. Serve the rolls warm alongside the remaining sweet chili sauce for dipping.
