Ingredients

Scale

Blueberry Compote

  • 1 pint fresh blueberries
  • 1/4 cup white sugar
  • Juice of 1 lemon
  • 1 small bundle lemon thyme, bundled with kitchen twine

Sandwich Filling

  • 4 oz white cheddar, grated
  • 4 oz whole mozzarella cheese, shredded

Sandwich Assembly

  • 8 slices sourdough bread, each 1/4 inch thick
  • 4 tbsp butter
  • Flaky sea salt, for finishing

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine the fresh blueberries, white sugar, lemon juice, and the bundled lemon thyme. Cook over medium heat, stirring occasionally, until the blueberries break down and the mixture thickens into a compote, about 10 minutes. Remove from heat and discard the thyme bundle. Let the compote cool slightly.
  2. Assemble the Sandwiches: Lay out the slices of sourdough bread. On four slices, evenly distribute the grated white cheddar and shredded mozzarella cheese. Spread a generous tablespoon of the blueberry compote over the cheese, then top with the remaining bread slices to form sandwiches.
  3. Cook the Grilled Cheese: Heat a skillet or griddle over medium heat. Spread 1 tablespoon of butter on the outside of each sandwich. Place the sandwiches in the skillet and cook until the bread is golden brown and crispy, about 3-4 minutes per side, pressing down gently with a spatula to ensure even cooking and melting of the cheese.
  4. Serve: Remove the sandwiches from the skillet and sprinkle with flaky sea salt for an added burst of flavor. Slice in half and serve immediately while warm and melty.

Notes

  • You can substitute lemon thyme with regular thyme or fresh basil for a different herbal note.
  • Use day-old sourdough bread for better crispiness when grilling.
  • Adjust the amount of blueberry compote according to your sweetness preference.
  • For a vegan version, use plant-based cheese and butter alternatives and omit the lemon thyme if not available.
  • To keep sandwiches warm while cooking in batches, place them on a baking sheet in a low oven (around 200°F / 93°C).
