Ingredients

Scale

Rice and Sauce Base

  • 2 cups white Jasmine rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1¼ cups chicken stock
  • 3 teaspoons minced garlic
  • ½ teaspoon black pepper

Chicken and Seasoning

  • lbs boneless, skinless chicken breasts
  • 1 packet Lipton® onion soup mix
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. Prepare the rice and sauce mixture: In a large mixing bowl, combine the jasmine rice, cream of chicken soup, cream of mushroom soup, chicken stock, minced garlic, and black pepper. Stir well until the mixture is evenly blended.
  2. Layer ingredients in Crock Pot: Pour half of the rice and sauce mixture into the bottom of the Crock Pot. Place the chicken breasts on top of this layer, then sprinkle the Lipton onion soup mix evenly over the chicken. Finally, pour the remaining rice mixture on top, fully covering the chicken to ensure an even cook.
  3. Cook the dish: Cover the Crock Pot and cook on low heat for 4 to 5 hours or until the chicken is fully cooked and the rice is tender. Avoid lifting the lid during cooking to keep the steam sealed in, ensuring the rice cooks properly.
  4. Garnish and serve: Once cooked, give the mixture a gentle stir to combine. Sprinkle freshly chopped parsley on top for a burst of color and freshness before serving.

Notes

  • Do not lift the Crock Pot lid during cooking to prevent steam from escaping, which is crucial for the rice to cook properly.
  • If using chicken thighs instead of breasts, cooking time may be slightly reduced due to their higher fat content.
  • For a gluten-free option, use gluten-free cream soups and verify the onion soup mix does not contain gluten.
  • Adjust garlic and black pepper to taste if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
