Instructions

  1. Prepare the Base: In the crock pot, combine the Jasmine rice, cream of chicken soup, cream of mushroom soup, chicken stock, minced garlic, black pepper, and Lipton onion soup mix. Stir well to create an even mixture.
  2. Arrange the Chicken: Place the boneless, skinless chicken breasts on top of the rice mixture, ensuring they are evenly spaced and mostly submerged into the sauce but not mixed in.
  3. Cook: Cover the crock pot with the lid and cook on low heat for 4-5 hours or on high for 2-3 hours, until the chicken is cooked through and the rice is tender.
  4. Check and Garnish: Once cooking time is complete, check that the chicken is fully cooked (internal temperature should reach 165°F/74°C). Sprinkle freshly chopped parsley over the top before serving to add freshness and color.
