Instructions

  1. Prepare the mango puree: Peel and cut the mangoes into cubes. Place them in a blender or food processor and blend until smooth. Set the mango puree aside for later use.
  2. Whip the cream: In a chilled mixing bowl, combine the cold heavy cream, powdered sugar, and vanilla bean paste or extract if using. Beat the mixture until stiff peaks form, indicating the cream is fluffy and firm.
  3. Fold in the mango: Gently incorporate the mango puree into the whipped cream by folding carefully until fully combined and no streaks remain. This helps maintain the airy texture of the mousse.
