Ingredients

Scale

For the Biscuit Base

  • 1 can (16.3 oz) refrigerated biscuit dough

For the Sausage Gravy

  • 1 lb ground breakfast sausage
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

Additional Toppings

  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives (optional)

Instructions

  1. Prepare the Biscuit Crust: Preheat your oven to 375°F (190°C). Roll out the refrigerated biscuit dough onto a greased or parchment-lined pizza pan, pressing the biscuits together to form an even crust. Bake for about 10-12 minutes until lightly golden but still soft. Remove from oven and set aside.
  2. Cook the Sausage: In a large skillet over medium heat, cook the ground breakfast sausage until it is browned and cooked through, breaking it apart with a spatula as it cooks. Drain excess fat if necessary, leaving about 1 tablespoon in the pan for the gravy.
  3. Make the Gravy: Sprinkle the all-purpose flour over the cooked sausage in the skillet and stir to coat the sausage evenly. Cook for 1-2 minutes to eliminate the raw flour taste. Gradually whisk in the whole milk, continuing to stir until the mixture thickens and becomes creamy. Season with black pepper and salt to taste. Remove from heat.
  4. Prepare the Eggs: In a separate bowl, whisk the six large eggs gently. Pour them into a non-stick skillet over medium-low heat and scramble until just set but still moist. Remove from heat.
  5. Assemble the Breakfast Pizza: Spread the sausage gravy evenly over the pre-baked biscuit crust. Scatter the scrambled eggs over the gravy layer. Sprinkle the shredded cheddar cheese evenly on top of the eggs.
  6. Bake to Melt Cheese: Place the assembled pizza back into the oven and bake for an additional 8-10 minutes, or until the cheese is melted and bubbly, and the edges are golden brown.
  7. Garnish and Serve: Remove the pizza from the oven and sprinkle with chopped fresh chives if using. Slice and serve immediately for a warm, savory breakfast delight.

Notes

  • Use whole milk for the creamiest gravy; you can substitute 2% milk but the texture will be slightly less rich.
  • If you prefer a spicier option, consider adding a pinch of cayenne pepper or red pepper flakes to the gravy.
  • You can use shredded mozzarella in place of cheddar for a milder flavor.
  • Chives are optional but add fresh color and a mild onion flavor.
  • Make sure not to overbake the biscuit crust initially to avoid a tough base after assembling.
  • Leftover breakfast pizza can be refrigerated and reheated in a toaster oven or microwave.
