Instructions

  1. Preheat the Oven. Set your oven to 350°F (175°C) and grease a mini muffin tin or line it with mini muffin liners to prevent sticking.
  2. Mix Dry Ingredients. In a large bowl, combine 2 cups of Bisquick, 1/4 cup sugar, 1/2 teaspoon cinnamon, and 1/2 teaspoon pumpkin pie spice. Stir these together until well blended.
  3. Add Wet Ingredients. Add 1/2 cup pumpkin puree, 1/4 cup milk, 1 large egg, and 2 tablespoons vegetable oil to the dry ingredients. Mix until the batter is smooth and evenly combined, being careful not to overmix.
