Ingredients

Scale

Vegetables

  • 1/2 large yellow onion, chopped
  • 1 green bell pepper, chopped
  • 5 cups cubed sweet potatoes
  • 3 garlic cloves, minced

Protein & Dairy

  • 1 pound turkey sausage
  • 10 eggs
  • 1/2 cup grated mozzarella cheese
  • 1/2 cup milk (plant-based milk can be substituted)

Oils & Spices

  • 2 tablespoons avocado oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat and Prepare Sweet Potatoes: Preheat your oven to 375°F (190°C). Toss the cubed sweet potatoes with 1 tablespoon of the avocado oil and spread them on a baking sheet. Roast for about 20 minutes until tender and slightly caramelized.
  2. Sauté Aromatics and Sausage: While the sweet potatoes roast, heat the remaining 1 tablespoon of avocado oil in a large skillet over medium heat. Add the chopped onion, green bell pepper, and garlic. Sauté until softened, about 5 minutes. Add the turkey sausage, breaking it up with a spoon, and cook until browned and cooked through, about 7-8 minutes.
  3. Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, dried thyme, salt, and pepper until well combined. Add the roasted sweet potatoes and the cooked sausage mixture to the eggs and gently fold everything together.
  4. Assemble the Casserole: Pour the mixture into a greased 9×13 inch baking dish. Sprinkle the grated mozzarella cheese evenly on top.
  5. Bake the Casserole: Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the cheese is melted and golden.
  6. Serve: Let the casserole cool for a few minutes before slicing. Serve warm and enjoy your nutritious, easy-to-make sweet potato egg casserole!

Notes

  • You can substitute turkey sausage with plant-based sausage or pork sausage as desired.
  • For a dairy-free option, use plant-based milk and omit or substitute the mozzarella with a dairy-free cheese.
  • The casserole can be made a day ahead and refrigerated; reheat before serving.
  • Add extra veggies like spinach or mushrooms for more flavor and nutrition.
  • This recipe is suitable for breakfast, brunch, or even a comforting dinner.
