Ingredients

Scale

Meatloaf

  • 1 lb ground chicken (90-93% lean)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 egg
  • 1/4 cup grated or finely chopped onion
  • 1 tablespoon fresh parsley (or 1 tsp dried)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Garlic Parmesan Sauce

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon flour
  • 3/4 cup milk
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the meatloaves.
  2. Prepare Meatloaf Mixture: In a large bowl, combine ground chicken, minced garlic, 1/2 cup grated Parmesan, breadcrumbs, egg, grated onion, parsley, salt, black pepper, and Italian seasoning. Mix thoroughly until all ingredients are evenly incorporated.
  3. Shape Meatloaves: Divide the meat mixture into individual portions and shape each into small loaf forms. Place them onto a baking sheet or a lightly greased baking dish.
  4. Bake Meatloaves: Place the meatloaves in the preheated oven and bake for about 25-30 minutes or until they reach an internal temperature of 165°F (74°C) and are cooked through.
  5. Make Garlic Parmesan Sauce: While the meatloaves bake, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in the flour and cook for another minute to form a roux.
  6. Add Milk and Cheese: Gradually whisk in the milk, stirring continuously to avoid lumps. Cook until the sauce thickens, then stir in 1/3 cup grated Parmesan cheese until melted and smooth. Remove from heat.
  7. Serve: Once the meatloaves are done baking, remove them from the oven and spoon the warm garlic Parmesan sauce over each serving. Serve immediately and enjoy!

Notes

  • Use fresh garlic for the best flavor.
  • Ensure ground chicken is fully cooked to an internal temperature of 165°F (74°C).
  • The sauce can be prepared ahead and reheated gently before serving.
  • Breadcrumbs help bind the meatloaf but can be substituted with gluten-free breadcrumbs if needed.
  • Leftovers can be stored in the refrigerator for up to 3 days.
