A classic Southern-style Cornbread Dressing that combines crumbly cornbread with sautéed onions, celery, herbs, and eggs, baked to golden perfection. This comforting side dish is a flavorful accompaniment to holiday meals or any family gathering.

Ingredients

Scale

Cornbread Base

  • 6 cups crumbled cornbread (preferably day-old)
  • 2 large eggs
  • 2 cups chicken broth (or vegetable broth for vegetarian option)

Vegetables & Herbs

  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 2 teaspoons poultry herbs (sage, thyme, and parsley combined)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Prepare the Vegetables: In a medium skillet over medium heat, sauté the chopped onion and celery until they are softened and translucent, about 5-7 minutes. This step helps release their flavors and adds a tender texture to the dressing.
  2. Mix Cornbread and Eggs: In a large mixing bowl, crumble the cornbread into small pieces. Beat the eggs lightly then add them to the cornbread, ensuring the mixture begins to bind together.
  3. Add Broth and Herbs: Pour in the chicken broth gradually while mixing, so the cornbread absorbs the liquid but does not become soggy. Stir in the sautéed vegetables, poultry herbs, salt, and pepper until all ingredients are evenly combined.
  4. Transfer to Baking Dish: Grease a 9×13 inch baking dish with butter or non-stick spray. Spoon the cornbread mixture into the dish, pressing gently to level the top.
  5. Bake the Dressing: Preheat your oven to 350°F (175°C). Bake the dressing for 45 to 55 minutes, or until it is set in the center and the top is golden brown. Remove from oven and let it rest for 5 minutes before serving.

Notes

  • Using day-old cornbread prevents the dressing from becoming too mushy.
  • For a vegetarian version, substitute chicken broth with vegetable broth.
  • You can add cooked sausage or bacon for extra flavor.
  • Adjust herbs to taste—sage and thyme are traditional favorites.
  • Ensure the mixture is moist but not watery before baking.
