Instructions

  2. Set the chia pudding: Transfer the mixture to the refrigerator and allow it to firm up for at least 2 hours or preferably overnight so the chia seeds can fully swell and create a pudding-like texture.
  3. Make the lime mousse: Add the soaked and drained cashews, coconut milk, maple syrup, key lime juice, lime zest, and matcha powder (if using) to a blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed to ensure an even consistency.
