Meat
Vegetables
- 1 ¼ pounds potatoes (about 5 medium-sized), chopped
- 1 Vidalia onion, chopped
- 1 clove garlic, minced
Spices and Seasonings
- ½ tsp paprika
- ⅓ tsp kosher salt
- ¼ tsp oregano or Italian seasoning
- Preheat Skillet: Preheat a skillet over medium-high heat to prepare for cooking the kielbasa.
- Brown the Kielbasa: Slice the kielbasa sausage and add to the hot skillet. Stir occasionally while frying for about 6 minutes to achieve even browning. Once browned, remove the kielbasa and set aside, leaving the rendered fat in the pan.
- Prepare Vegetables: While the kielbasa is browning, chop the onion and potatoes into bite-sized pieces.
- Cook the Potatoes: Add the chopped potatoes to the skillet with kielbasa grease. Sprinkle with paprika, kosher salt, and oregano. Stir to coat the potatoes evenly. Reduce heat to medium or medium-low, cover the skillet, and cook for about 13 minutes, stirring regularly to prevent sticking and ensure even cooking.
- Sauté Onions and Garlic: Add the chopped onions and minced garlic to the potatoes in the skillet. Cover and cook for about 12 minutes, stirring regularly until the potatoes soften and onions become translucent.
- Combine and Finish Cooking: Add the browned kielbasa back into the skillet with the potatoes and onions. Mix well and cook an additional 4 minutes to meld flavors and heat through.
Notes
- Using a Vidalia onion adds sweetness, but any onion will work.
- Covering the skillet helps the potatoes cook faster and more evenly.
- Feel free to add bell peppers or other vegetables for variety.
- Serve with a side of mustard or your favorite dipping sauce for extra flavor.
- This dish can be stored in the refrigerator for up to 3 days and reheated on the stovetop.
