Chicken Filling

  • 1 cup shredded mozzarella cheese (preferably shredded from a block)

  • 1/4 cup cream cheese, softened (leave out 30 minutes before mixing)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Wraps & Cooking

  • 1 tablespoon olive oil

Instructions

  1. Prepare the Skillet and Tortillas: Preheat a skillet or grill pan over medium heat and add the olive oil. While the skillet heats, warm your low-carb tortillas in the microwave for 10-15 seconds covered with a damp paper towel to prevent cracking when rolling.
  2. Mix the Filling: In a large mixing bowl, combine the shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, parsley, salt, and pepper. If using spinach, mix it in at this stage. Stir thoroughly until the cream cheese coats all ingredients evenly, creating a creamy, garlicky mixture.
  3. Assemble the Wraps: Divide the chicken mixture evenly among the four tortillas, placing about 1/2 cup in the center of each. Don’t overfill to prevent splitting. Roll each tortilla tightly, tucking in the sides as you wrap to form secure burrito-like wraps.
  4. Cook the Wraps: Place the wraps seam-side down in the preheated skillet. Cook undisturbed for 2-3 minutes per side until golden brown and crispy outside with cheese starting to ooze from edges. If they brown too quickly but cheese hasn’t melted, lower heat to medium-low.
  5. Serve: Remove wraps from the skillet, slice each in half diagonally, and serve immediately while the cheese is melty. Garnish with extra parsley if desired.
