  • 2 tbsp grated Parmesan cheese (optional)

Finishing

  • 1 egg, beaten (for egg wash)
  • Nonstick spray or melted butter (for greasing muffin tins)

Instructions

  1. Prepare the crust: Preheat your oven to 375°F (190°C). Lightly grease six small aluminum muffin tins or ramekins with nonstick spray or melted butter to prevent sticking. Roll out the refrigerated pie crust on a lightly floured surface and cut it into six circles large enough to line the muffin tins with some overhang.
  2. Assemble the pot pies: Press each pie crust circle gently into the muffin tins to form a small bowl shape. Spoon about one tablespoon of pizza sauce into the bottom of each crust-lined tin. Next, sprinkle approximately two tablespoons of shredded mozzarella cheese evenly over the sauce. Add mini pepperoni slices to each, and sprinkle with dried oregano and garlic powder. If using, add a light dusting of grated Parmesan cheese on top for extra flavor.
  3. Seal and finish: Cut six additional small circles from the remaining pie crust to fit as lids over the filling. Place each circle on top of the filling in the muffin tins, gently pressing the edges to seal the pot pie. Brush the tops with the beaten egg wash to help achieve a beautiful golden-brown finish once baked.
  4. Bake: Place the muffin tins on a baking sheet and bake in the preheated oven for 18-22 minutes, or until the crust is fully cooked and golden brown. Keep an eye on them to prevent burning.
  5. Serve: Allow the mini pizza pot pies to cool for 5 minutes before carefully removing them from the tins. Serve warm as a delightful snack, appetizer, or small meal.
