Ingredients

Scale

Main Ingredients

  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. Mix wet ingredients: In a large mixing bowl, combine the almond butter, honey, and peppermint extract. Stir well until the mixture is smooth and fully blended to evenly distribute the peppermint flavor.
  2. Add dry ingredients: Add the rolled oats and vanilla protein powder to the wet mixture. Stir until all ingredients are thoroughly incorporated and form a thick, slightly sticky dough.
  3. Fold in chocolate chips: Gently fold in the mini dark chocolate chips, making sure they are evenly spread throughout the dough without melting.
  4. Adjust consistency: If the mixture is too dry or crumbly to hold together, add 1-2 tablespoons of unsweetened almond milk, one tablespoon at a time, mixing well after each addition until the dough is moldable.
  5. Form balls: Using your hands, roll the dough into approximately 1-inch diameter balls. You should get about 16-18 balls depending on size.
  6. Chill: Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up before serving.
  7. Store and enjoy: Store the protein balls in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

  • You can substitute almond butter with peanut butter or any other nut/seed butter of your choice.
  • Add more peppermint extract for a stronger mint flavor, but be cautious as it can be potent.
  • Use your favorite protein powder, such as whey, plant-based, or collagen, depending on dietary preferences.
  • For a vegan version, replace honey with maple syrup or agave nectar.
  • If the mixture feels too sticky, you can add extra oats to reach the desired consistency.
