Ingredients

Scale

Dry Ingredients

  • 6 cups Rice Krispies cereal
  • 1 1/2 cups powdered sugar, shaken (or 1/2 cup, sprinkled)

Wet Ingredients

  • 2 cups chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Melt the Chocolate Mixture: In a medium saucepan over low heat, combine 2 cups of chocolate chips, 1/2 cup of creamy peanut butter, and 1/4 cup of unsalted butter. Stir constantly until the mixture is smooth and fully combined. Remove the pan from heat and stir in 1 teaspoon of vanilla extract for enhanced flavor.
  2. Mix with Rice Krispies: Place 6 cups of Rice Krispies cereal in a large mixing bowl. Pour the warm chocolate and peanut butter mixture over the cereal. Using a spatula, gently fold the mixture until all the cereal is evenly coated with the chocolate mixture, being careful not to crush the cereal.
  3. Coat with Powdered Sugar: Transfer the coated cereal mixture into a large resealable plastic bag or a large bowl. Add 1 1/2 cups of powdered sugar (if shaken) or 1/2 cup (if sprinkled). Seal the bag or cover the bowl, then shake vigorously or stir until the cereal pieces are well coated with the powdered sugar, giving the treats their signature ‘muddy buddy’ powdery finish.
  4. Cool and Serve: Spread the Muddy Buddy Rice Krispies on a parchment-lined baking sheet to cool and set. Once cooled to room temperature, serve immediately or store in an airtight container for up to 3 days to maintain freshness and crunch.

Notes

  • Use creamy peanut butter for a smoother coating and easier mixing.
  • For a gluten-free option, ensure the Rice Krispies cereal is certified gluten-free.
  • Adjust the amount of powdered sugar to your desired sweetness and coating intensity.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • You can add a pinch of salt to the melted mixture for a slightly salted flavor balance.
