Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Noodles and Sauce

  • 4 cups chicken broth
  • 8 ounces egg noodles
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced

Garnish (Optional)

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, mix together garlic powder, onion powder, paprika, salt, and pepper. Rub the spice mixture evenly over both sides of the chicken breasts.
  2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes per side, until golden brown but not necessarily cooked through. Remove the chicken from the skillet and set aside.
  3. Cook the Garlic: Reduce heat to medium. Add the minced garlic to the same skillet and sauté for about 30 seconds until fragrant, making sure not to burn it.
  4. Add Broth and Noodles: Pour in the chicken broth and bring it to a boil. Add the egg noodles to the simmering broth, spreading them out evenly in the pan.
  5. Return Chicken and Simmer: Place the chicken breasts back into the skillet on top of the noodles. Reduce heat to medium-low, cover, and simmer for about 12-15 minutes, or until the noodles are tender and the chicken is cooked through to an internal temperature of 165°F (74°C).
  6. Finish with Butter and Cheese: Remove the chicken and noodles from heat. Stir in the unsalted butter until melted and combined. If using, sprinkle the grated Parmesan cheese over the noodles and stir gently. Adjust seasoning with salt and pepper if needed.
  7. Serve and Garnish: Slice the chicken breasts and serve over the buttered noodles. Garnish with fresh parsley for a pop of color and freshness.

Notes

  • You can substitute chicken thighs for a juicier option, adjusting cooking times accordingly.
  • For a creamier dish, stir in a splash of heavy cream or milk after removing from heat.
  • To make it gluten-free, use gluten-free noodles or substitute with spiralized vegetables.
  • Leftovers store well refrigerated for up to 3 days; reheat gently to avoid drying out the chicken.
  • Adding a squeeze of fresh lemon juice before serving brightens the flavors.
