Ingredients

Scale

Butter and Aromatics

  • 4 Tbsp. unsalted butter (divided)
  • 23 cloves garlic, finely minced

Pasta and Liquids

  • 1 ½ cups uncooked ditalini pasta
  • 2 ½ cups chicken broth (or more as needed)
  • ⅓ cup heavy cream (or more as desired)

Seasonings and Cheese

  • Salt, black pepper, chili flakes to taste
  • 5.3 oz. garlic and fine herbs Boursin cheese (room temperature)
  • 12 Tbsp. fresh lemon juice (about a squeeze)

Garnish

  • Fresh basil leaves
  • Grated Parmesan cheese
  • Additional chili flakes

Instructions

  1. Melt Butter and Sauté Garlic: Heat 1 tablespoon of butter in a hot skillet over medium heat. Add the finely minced garlic and cook, stirring constantly, for 30 seconds to 1 minute until the garlic is fragrant but not browned or burnt.
  2. Add Pasta: Stir in the uncooked ditalini pasta, coating it thoroughly with the butter and garlic mixture to ensure even cooking.
  3. Simmer Pasta in Broth: Pour in 2 cups of chicken broth and bring the mixture to a boil. Reduce the heat to a simmer and cook uncovered for 8-10 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed. If broth evaporates before pasta is fully cooked, add more broth as needed. Then stir in the heavy cream and simmer for a few more minutes to thicken the sauce.
  4. Add Cheese and Seasonings: Remove the skillet from heat and add the remaining 3 tablespoons of butter, stirring until melted. Blend in the Boursin cheese, salt, black pepper, and chili flakes. Finish by squeezing in fresh lemon juice and mixing thoroughly. Taste and adjust seasoning if required. If desired, return to low heat briefly to warm and make the pasta extra creamy.
  5. Garnish and Serve: Plate the pasta and garnish with fresh basil leaves, grated Parmesan, and additional chili flakes for extra flavor and color. Note that the dish will thicken as it cools; to reheat, add a splash of broth or water to loosen the sauce.

Notes

  • The pasta absorbs most of the liquid while cooking, so keep extra broth on hand to prevent it from drying out.
  • Using room temperature Boursin cheese ensures it melts smoothly into the sauce.
  • Adjust the amount of chili flakes according to your spice preference.
  • Heavy cream can be increased for a richer sauce or substituted with half-and-half for a lighter version.
  • For a vegetarian option, substitute chicken broth with vegetable broth.
  • Serve immediately for the best creamy texture; reheating may require adding liquid to restore creaminess.
