Instructions

  1. Prepare the Filling: In a large skillet over medium heat, cook the lean ground beef until browned, breaking it up as it cooks. Add the diced yellow onion, green bell pepper, and chopped garlic to the skillet, cooking until the vegetables are softened and fragrant, about 5 minutes.
  2. Add Pepperoni and Sauce: Stir in the chopped pepperoni, pizza sauce, and Italian seasoning. Let the mixture simmer for a few minutes to combine the flavors thoroughly and heat through. Remove from heat.
  3. Assemble the Enchiladas: Preheat your oven to 375°F (190°C). On a clean surface, lay out each flour tortilla. Spoon an even amount of the meat mixture down the center of each tortilla. Add a dollop of ricotta cheese and sprinkle some mozzarella cheese over the filling.
