Ingredients

Scale

Shrimp and Vegetables

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, cut into 2-inch pieces
  • 8 ounces mushrooms, sliced

Sauce and Seasoning

  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Serving

  • Cooked rice or noodles, for serving

Instructions

  1. Prepare Ingredients: Peel and devein the shrimp if not already done. Trim the asparagus and cut into 2-inch pieces. Slice mushrooms and mince garlic and grate fresh ginger.
  2. Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until hot but not smoking.
  3. Sauté Aromatics: Add minced garlic and grated ginger to the pan, stir-frying for about 30 seconds until fragrant but not burnt.
  4. Cook Shrimp: Add the shrimp to the pan and stir-fry for 2 to 3 minutes until they start turning pink and are nearly cooked through. Remove shrimp and set aside to prevent overcooking.
  5. Cook Vegetables: In the same pan, add asparagus and mushrooms. Stir-fry for 3 to 5 minutes until vegetables are tender-crisp.
  6. Add Sauce and Shrimp: Return the shrimp to the pan. Stir in soy sauce, oyster sauce (if using), and sesame oil. Toss everything together for another 1 to 2 minutes until shrimp are fully cooked, and the sauce coats all ingredients evenly.
  7. Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Serve hot over cooked rice or noodles.

Notes

  • For a spicier version, add a pinch of red pepper flakes or a splash of chili garlic sauce while cooking.
  • If oyster sauce is unavailable or preferred to be omitted for dietary reasons, simply increase soy sauce slightly or add a splash of hoisin sauce for sweetness.
  • Ensure shrimp is cooked just until pink to avoid toughness.
  • Use fresh asparagus for best texture and flavor; frozen can be used but may be softer.
  • Leftovers can be stored in the refrigerator for up to 2 days but are best enjoyed fresh.
