Ingredients
- 1 cup split peas, rinsed
- 2 cups cooked ham, diced
- 2 medium carrots, peeled and chopped
- 1 medium onion, chopped
- 6 cups water or low-sodium broth
- Salt and pepper to taste
- Prepare Ingredients: Rinse the split peas under cold running water. Peel and chop the carrots into small pieces. Chop the onion finely. Dice the cooked ham into bite-sized pieces.
- Add to Slow Cooker: Place the rinsed split peas, diced ham, chopped carrots, and onions into the slow cooker. Pour in 6 cups of water or low-sodium broth to cover the ingredients.
- Season and Cook: Add salt and pepper to taste. Cover the slow cooker with its lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the peas are very soft and the soup is thickened.
- Final Stir: Stir the soup well to combine all flavors. Adjust seasoning with additional salt and pepper if needed. Serve hot.
Notes
- For a smoother texture, you can blend the soup partially or fully before serving.
- Using low-sodium broth helps control salt content, especially since ham can be salty.
- If you prefer a thicker soup, cook longer with the lid slightly ajar to allow excess liquid to evaporate.
- Leftovers store well in the refrigerator for up to 3 days or freeze for up to 3 months.
