Ingredients

Scale

Steak and Seasoning

  • 1 lb sirloin steak
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Rice and Vegetables

  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color)
  • 2 tbsp olive oil

Cheese

  • 1 cup queso cheese (Monterey Jack or cheddar)

Instructions

  1. Prepare the Steak: Pat the sirloin steak dry and season both sides with paprika, cumin, chili powder, salt, and pepper. Let it rest while preparing the other ingredients to allow the flavors to infuse.
  2. Cook the Rice: Rinse the long-grain white rice under cold water until the water runs clear. Cook the rice according to package instructions or by simmering it in water until tender. Set aside once done.
  3. Sauté the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion, minced garlic, and diced bell pepper. Cook until softened and fragrant, about 5-7 minutes, stirring occasionally to prevent burning.
  4. Cook the Steak: In a separate skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the seasoned sirloin steak and cook for about 4-5 minutes per side or until desired doneness. Remove from heat and let it rest for 5 minutes before slicing thinly against the grain.
  5. Combine Ingredients: Add the cooked rice to the sautéed vegetables and stir to combine. Lower the heat to medium-low and add queso cheese to the rice mixture, stirring until the cheese melts and evenly coats the rice and vegetables.
  6. Serve: Plate the cheesy rice mixture and top it with the sliced steak. Garnish with additional cheese or fresh herbs if desired. Serve warm and enjoy your comforting Steak and Queso Rice!

Notes

  • For a spicier kick, add diced jalapeños when sautéing the vegetables.
  • Use leftover steak to reduce cooking time.
  • Monterey Jack cheese melts creamier, while cheddar adds sharper flavor—choose based on preference.
  • Serve with a side of guacamole or fresh salsa for extra flavor.
  • Can be made gluten-free by ensuring all seasonings are gluten-free certified.
