Instructions

  1. Prepare the steak seasoning: In a small bowl, combine paprika, ground cumin, garlic powder, salt, and pepper. Rub this spice blend evenly over the flank or sirloin steak.
  2. Cook the steak: Heat olive oil in a large skillet over medium-high heat. Add the seasoned steak and cook for about 4-5 minutes each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5-10 minutes before slicing thinly against the grain.
  3. Make the queso sauce: In a saucepan over medium heat, melt the butter. Add the finely chopped garlic and cook until fragrant, about 1 minute. Stir in the whole milk, cumin, chili powder, salt, and pepper. Slowly add shredded cheddar cheese, stirring continuously to create a smooth, creamy sauce.
  4. Combine rice and queso sauce: If you have cooked rice ready (approximately 2 cups), fold it into the cheese sauce, mixing well to ensure each grain is coated beautifully with the queso.
