Ingredients

Scale

Cheesecake Mixture

  • 6 oz (170 g) cream cheese, cold
  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla extract
  • 12 oz (340 g) fresh strawberries, hulled and finely diced

Cookie Dough

  • 1/4 cup (50 g) granulated white sugar
  • 2 3/4 cups (344 g) all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar

Instructions

  1. Prepare the Cheesecake Filling: In a bowl, beat the cold cream cheese with 3 tablespoons of granulated sugar and 1/2 teaspoon of vanilla extract until smooth and creamy. Gently fold in the finely diced strawberries, ensuring they are evenly distributed without crushing them.
  2. Mix Dry Ingredients: In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt to combine all the dry ingredients uniformly.
  3. Cream Sugar and Incorporate Dry Ingredients: In another bowl, beat 1 cup of granulated sugar with your choice of fat (typically butter or cream cheese as per recipe base) until creamy. Gradually add the dry ingredients to the sugar mixture, blending until a soft dough forms.
  4. Combine Dough and Cheesecake Mixture: Gently fold the cheesecake filling with strawberries into the cookie dough, mixing carefully to keep the strawberries intact and distribute the filling evenly.
  5. Shape the Cookies: Using a spoon or cookie scoop, drop dollops of dough onto a baking sheet lined with parchment paper, spacing them at least 2 inches apart to allow for spreading.
  6. Bake the Cookies: Preheat your oven to 350°F (177°C). Bake the cookies for 12-15 minutes or until the edges are lightly golden but the centers remain soft.
  7. Cool and Serve: Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy the creamy strawberry cheesecake flavors in each bite.

Notes

  • Ensure cream cheese is cold for best texture when mixing with strawberries.
  • Use fresh, ripe strawberries for optimum flavor and sweetness.
  • Do not overmix the dough after adding strawberries to prevent them from breaking down.
  • Cookies will be soft when warm but will firm up as they cool.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
