Ingredients

Scale

Fresh Fruit

  • 1 lb. strawberries, hulled and quartered
  • 2 1/2 cups pineapple, chopped
  • 6 oz. blueberries
  • 6 oz. blackberries
  • 23 kiwis, peeled and sliced
  • 3 cuties, peeled
  • 1 1/2 cups red grapes, cut in half

Dressing

  • 1/2 cup frozen apple juice concentrate
  • 1 tablespoon honey
  • Zest of 1 lemon
  • Juice of 1 lemon

Topping

  • Ice cream of choice (strawberry, orange sorbet, rainbow sorbet, or vanilla)

Instructions

  1. Prepare the Fruit: Wash all the fresh fruit thoroughly. Hull and quarter the strawberries, peel and slice the kiwis, peel the cuties, and cut the red grapes in half. Chop the pineapple into bite-sized pieces. Combine all the prepared fruit in a large mixing bowl.
  2. Make the Dressing and Toss: Add the honey, frozen apple juice concentrate, lemon zest, and lemon juice to the mixing bowl with the fruit. Gently stir the mixture until all the fruit pieces are evenly coated with the dressing.
  3. Serve or Store: The fruit salad can be served immediately for the freshest flavor or stored in the refrigerator until ready to serve to keep it chilled and fresh. Optionally, serve the fruit salad topped with a scoop of your preferred ice cream or sorbet for a creamy and indulgent finish.

Notes

  • For best results, use fresh, ripe seasonal fruits.
  • The frozen apple juice concentrate adds a tart sweetness and helps preserve the fruit salad.
  • You can substitute honey with agave syrup or maple syrup for a vegan variation.
  • This salad is best served fresh but can be stored refrigerated for up to 24 hours.
  • Pairing with sorbet or ice cream adds a creamy texture and makes it a refreshing dessert.
