Meatloaf
- 2 lbs ground turkey
- 1/2 cup milk
- 1 egg (beaten)
- 1 small onion (finely diced)
- 4 cloves garlic (minced)
- 1 cup bread crumbs
- 1 teaspoon dried parsley
- 1 teaspoon Italian seasoning
- 1/4 teaspoon salt and pepper
- 1 cup Pepper Jack cheese (diced into small cubes or shredded)
Meatloaf Glaze
- 1/3 cup ketchup
- 2 tablespoons light brown sugar
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon ground mustard
- Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the meatloaf.
- Prepare the Pan: Lightly grease a meatloaf pan with oil and set it aside. Alternatively, you can use a baking sheet covered with aluminum foil, lightly greased with oil, and set this aside as well.
- Make the Glaze: In a small bowl, combine the ketchup, light brown sugar, apple cider vinegar, and ground mustard. Mix well until fully combined and set aside for later use.
- Combine Meatloaf Ingredients: In a large bowl, add ground turkey, milk, beaten egg, finely diced onion, minced garlic, bread crumbs, dried parsley, Italian seasoning, salt, and pepper. Mix thoroughly using your hands until all ingredients are well incorporated.
- Add Cheese: Add the diced or shredded Pepper Jack cheese to the meat mixture and mix well to distribute the cheese evenly throughout the mixture.
- Shape the Loaf: Shape the meat mixture into a loaf and transfer it either to the prepared meatloaf pan or place it on the greased baking sheet.
- Bake the Meatloaf: Place the meatloaf in the oven and bake for 60 minutes. Halfway through baking, about 30 minutes in, spoon the prepared meatloaf glaze over the top of the loaf and spread it evenly.
- Continue Baking: Bake for an additional 20 to 30 minutes, or until the internal temperature of the meatloaf reaches between 160 and 165 degrees Fahrenheit, ensuring it is fully cooked.
- Rest and Serve: Remove the meatloaf from the oven and transfer the pan to a cooling rack. Let it rest for 10 to 15 minutes before slicing and serving to allow the juices to redistribute.
Notes
- Using lean ground turkey keeps the meatloaf healthier but adding cheese adds moisture and flavor.
- Make sure not to overmix the meat mixture to keep the meatloaf tender.
- The glaze adds a perfect balance of sweet and tangy; feel free to adjust sugar or vinegar to your taste.
- Resting the meatloaf after baking ensures juicier slices and easier cutting.
- Check internal temperature with a meat thermometer to ensure food safety.
