Dressing
- 1 cup plain Greek yogurt
- 1/2 cup grated English cucumber, excess moisture squeezed out
- 3 tablespoons fresh lemon juice
- 2 garlic cloves, peeled and grated
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Salad
- 4 cups cooked chicken, chopped or shredded
- 1 cup diced cucumber
- 1/2 cup diced celery
- 1/2 cup diced red onion
- 1/2 cup crumbled feta cheese
- Prepare the Tzatziki Dressing: In a medium bowl, combine the Greek yogurt, grated cucumber, fresh lemon juice, grated garlic, chopped dill, chopped parsley, sea salt, and freshly ground black pepper. Stir thoroughly until all ingredients are well blended and the dressing is creamy.
- Mix the Salad: Add the chopped or shredded cooked chicken, diced cucumber, celery, red onion, and crumbled feta cheese to the bowl with the dressing. Stir gently to ensure all ingredients are evenly coated with the tzatziki dressing. Taste and adjust the seasoning by adding more lemon juice, salt, or pepper if needed.
- Serve: This salad can be served in multiple ways — over a bed of mixed greens, with pita chips, inside a pita pocket, wrapped in a lettuce cup, or as a sandwich or wrap filling. For extra flavor and garnish, top with chopped tomatoes, kalamata olives, additional feta, or fresh herbs as desired.
Notes
- Make sure to squeeze out excess moisture from the grated cucumber to avoid a watery salad.
- Use cooked chicken leftover from a roast or rotisserie chicken to save time.
- Feel free to substitute fresh herbs with dried ones if fresh are not available, but reduce quantity by half.
- This salad can be refrigerated for up to 2 days, but it’s best enjoyed fresh.
- For a lower-fat version, use low-fat Greek yogurt and reduced-fat feta cheese.
