Instructions

  1. Prepare Chickpeas: Drain and rinse the chickpeas thoroughly under cold water to remove any canning liquid, then set aside in a large mixing bowl.
  2. Prepare Cucumber: Peel (optional) and finely chop or grate the cucumber. If preferred, squeeze out excess moisture from the grated cucumber using a clean towel to avoid a watery salad.
  3. Combine Ingredients: Add the chopped cucumber to the chickpeas. In a separate small bowl, mix the Greek yogurt and minced garlic together until well blended.
  4. Mix Salad: Pour the yogurt and garlic mixture over the chickpeas and cucumber. Add olive oil and fresh dill if using. Stir everything gently to combine and coat the chickpeas evenly with the tzatziki sauce.
  5. Season and Chill: Season with salt and pepper to taste. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
