Ingredients

Scale

Ingredients

  • 300g white chocolate, chopped
  • 1 cup mini marshmallows
  • 150g digestive biscuits, roughly crushed
  • 1/2 cup mixed nuts (such as almonds, walnuts, and cashews), roughly chopped

Instructions

  1. Melt the white chocolate: Place the chopped white chocolate in a heatproof bowl over a pot of simmering water, ensuring the bowl does not touch the water. Stir gently until completely melted and smooth.
  2. Combine the mix-ins: In a large mixing bowl, add the crushed biscuits, mini marshmallows, and chopped nuts. Pour the melted white chocolate over the mixture and gently fold until all ingredients are evenly coated.
  3. Set the mixture: Line a baking tin (approximately 20x20cm) with baking paper. Pour the rocky road mixture into the tin and spread it evenly to the edges.
  4. Chill until firm: Place the tin in the refrigerator for at least 2 hours or until the rocky road is fully set and firm to touch.
  5. Serve: Once set, remove from the tin and cut into squares or bars. Serve chilled or at room temperature.

Notes

  • You can substitute digestive biscuits with graham crackers if preferred.
  • Use your favorite nuts or omit nuts for a nut-free version.
  • For added color and texture, try adding dried cranberries or chopped dried apricots.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
