Instructions

  1. Caramelize Onions: Heat olive oil or butter in a large pot over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until they turn a deep golden brown and become sweetly caramelized, about 25-30 minutes.
  2. Add Mushrooms and Broth: Stir in the sliced wild mushrooms with the caramelized onions and cook for 5-7 minutes until the mushrooms are tender. Then pour in the vegetable broth, stirring to combine. Bring the soup to a gentle simmer.
  3. Simmer and Add Kale: Let the soup simmer uncovered for about 15 minutes to develop flavors. Add the chopped kale and simmer for an additional 5 minutes until the kale is wilted but still vibrant green. Season the soup with salt, pepper, and optional herbs to taste. Serve hot.
